
Ingredients
For the Mexican Pizzas
8 small flour tortillas or corn tortillas for gluten-free
1 lb ground beef or turkey for a lighter option
1 packet taco seasoning
or homemade: 1 tbsp chili powder, 1 tsp cumin, ½ tsp garlic powder, ½ tsp onion powder, salt & pepper
½ cup water
1 cup shredded cheddar cheese or Mexican blend
½ cup refried beans optional
Toppings
Shredded lettuce
Diced tomatoes
Chopped green onions
Sliced black olives
Sour cream or Greek yogurt
Salsa or hot sauce
Method
Preheat the Oven
Preheat oven to 400°F (200°C).
Line a baking sheet with parchment paper or lightly grease it.
Cook the Beef
Brown the ground beef in a skillet over medium heat (6–8 minutes).
Drain excess fat if needed.
Stir in taco seasoning and water. Simmer for 2–3 minutes until thickened.
Assemble the Pizzas
Place 4 tortillas on the baking sheet.
Spread a thin layer of refried beans (if using) on each.
Top with seasoned beef, then a generous layer of shredded cheese.
Cover with another tortilla to form the “pizza.”
Bake
Bake for 8–10 minutes, until cheese is melted and tortillas are crisp.
Optional: Broil for 1–2 minutes at the end for extra browning (watch carefully).
Add Toppings
Remove from oven and let cool slightly.
Top with lettuce, tomatoes, green onions, black olives, and drizzles of sour cream or salsa.
